Today’s recipe is similar to our previous healthy pancake recipe. This next recipe is great if you pick up buttermilk on clearance at Safeway.
Wheat Germ Buttermilk Pancakes
2 eggs, lightly beaten
1/4 cup canola oil or applesauce
2 cups buttermilk
2 teaspoons baking soda
1/2 cup wheat germ
1/2 teaspoon salt
1 1/2 cups whole wheat pastry flour; you can substitute regular whole wheat flour
- In a medium bowl, mix eggs with oil (or applesauce) and buttermilk.
- Stir in baking soda, wheat germ, salt and flour; mix until blended.
- Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides, turning once.
This recipes will make about 12 pancakes.
If you don’t have buttermilk, you can improvise: measure 2 T lemon juice into a large measuring glass. Add enough milk to make it 2 cups. Let it sit for 5 min before using.
