I’m sure there is a name for this salad, and I know I could just make one up, but I want to give credit to Estie’s mom anyway:)
My friend, Estie, made this salad for lunch one day and it was so good that I have been copying it numerous times since then. I also am very happy to have another use for my tomatoes coming out of my garden.
1 yellow pepper, ( or orange)
1/3 of a red onion, cut into small pieces
1 1/2 tomatoes, cut into small pieces
1 can pinto or black beans, (I like the pinto best)
1 T olive oil
1T lime or lemon juice, ( fresh lime is better, but I only had lemon)
1T vinegar, (apple cidar, balsalmic)
salt & pepper to taste
Cut everything into small pieces. I always end up wishing I had cut mine smaller.
Mix everything together, (better after it has sat for a few hours)
