My friend Melinda and I were so inspired by Money Saving Mom’s Freezer Cooking Day that we decided to have one of our own! We’re planning to cook tomorrow after church — hopefully we’ll be finished by the time our kids go to AWANA at night. Our husbands are parenting for the day (because dads don’t babysit, people), so we should be able to work without interruption, except for nursing Matthew (me, not Melinda).
Our plan, which is pretty ambitious, is to make a four batches of eight dinners (32 total), two breakfasts and two snacks. We each planned out half and are responsible for bringing the ingredients. Here’s what I’m bringing to the kitchen:
Breakfast: pumpkin pancakes
I spent Thursday planning out my meals, checking my stockpile and creating my shopping list. On Friday, my mother-in-law watched my boys while Matthew and I hit Safeway to purchase the ingredients. The trip, which included 16 pounds of ground beef and four packages of chicken breasts, came to around $110. Not bad, considering at the end of tomorrow I will have 16 dinners and a bunch of breakfasts and snacks in the freezer.
