What’s for dinner? This week’s menu plan (10/15)

My husband threw me for a loop this week. He’s doing a juice fast. It throws off my dinner groove. I can’t make anything awesome or I have to listen to him complaining about how amazing the food smells. So I’m left with no motivation to cook and it’s hot dogs and mac and cheese with a few days of pancakes. I’m resisting the urge to bail on dinner and the kids and I are going to eat like normal. He can bury his face in a handkerchief.

Here’s what’s for dinner at my house this week:

Monday Orange Chicken with Broccoli and Rice

Tuesday Gyros (I use 1/2 turkey and lamb) with homemade pitas, hummus, olive and Tzatziki sauce

Wednesday – Turkey Burgers with the 1/2 lb leftover from the gyros

Thursday – Dinner club here — Rustic Italian Tortellini Soup with 5 minute bread and salad. Pumpkin Chocolate chip squares for dessert.

Friday – Taquitos (from the freezer)

Saturday – Pizza and spinach salad

Sunday – late lunch with friends, dinner will be snack-y stuff

I’ll also be making:

:: After school snacks — Pumpkin Pie banana chunk oatmeal cookies, something with apple (I have 40 lbs!). Any ideas?

Hi!

I am from France and we do a very tasty recipe with some apples…
(I am sure you have it here too!).
1 apple/person
For each apple …1 tbsp butter at room temp.
1 tbsp almonds sliced and roasted ( Can be any nuts…pecan, hazelnut, pine… just in small pieces.
1 tbsp brown sugar (can be reg sugar, honey,jam…).
1 tbsp of raisins or dried cranberries or cherries
Peel apples.
Take off the core.
Put the apples in a ovenproof dish. (They need to be up and snug).
Mix butter with sugar and dried fruits and nuts. Fill up each apple,
with the stuffing.
Bake in a warm oven (350 ) for 30 to 45 mn (depends of the size of the apples!).
Serve hot with vanilla ice-cream.
(We used to pour half and half in each apple at the end).

Let me know! It has been a long time that I did not eat those!

Apple butter! Use one of the recipes on allrecipes.com (it’s just chopped peeled apples, spices and sugar) but just put it all in your crockpot and let it cook until thick and dark. Stir occasionally and leave the lid off at the end to let it thicken. Soooo yummy on toast, bran muffins, ice cream, fresh bread, whatever! I used the crockpot method last year and will never go back to stovetop. I freeze it in small plastic containers and pull out as needed – no canning necessary.

If you don’t want to bake some of the apples, you can make apple cartwheels out of them. My son doesn’t like raisins, so I substitue chopped almonds for the raisins, he loves them. http://www.tasteofhome.com/Recipes/Apple-Cartwheels

this muffins are delicious!
Apple walnut muffins
INGREDIENTS
Three-fourths cup unbleached flour
One-fourth teaspoon grated nutmeg
Three-fourths cup whole-wheat flour
One-half cup unprocessed bran
Two and one-half teaspoons baking powder
One-half cup walnuts
1 teaspoon ground cinnamon
2 eggs
Two-thirds cup concentrated apple juice
1 large apple or 2 small ones, cored and chopped

INSTRUCTIONS
These muffins can also be baked in a 9×13 inch pan and cut into bars. The best apples to use are Fuji or Gala. These apples are usually smaller, so you may want to use two.
Preheat the oven to 400 degrees. Combine the flour, nutmeg, whole-wheat flour, bran, baking powder, and cinnamon in a food processor or blender and process until blended. Transfer the mixture to a large mixing bowl. Combine the eggs, apple juice, apple and walnuts in a bowl.
Add to dry mixture and mix until well moistened. Fill a nonstick 12-muffin tin that has been sprayed with a nonstick spray or lined with paper baking cups. Bake 20 minutes.
Makes 12 muffins
