Now that you have Philadelphia cooking creme in your fridge from the Kraft Catalina deals, what do you do with it? Here’s a simple Lemon Asparagus Orzo pasta salad dish I came up with this afternoon. This dish is super quick (my kids were watching an episode of Mike the Knight so however long that it), easy, and very versatile. You could use a different type of pasta or sub a different vegetable, such as broccoli, if you don’t have asparagus.
Lemon Asparagus Orzo Pasta
1 cup uncooked orzo pasta (or any other type of pasta)
1 cup asparagus (cut into 1 inch pieces)
1 T olive oil
1 clove garlic (minced)
1/3 cup Philadelphia Lemon & Herb cooking creme
1/4 cup feta
salt & pepper to taste
Cook orzo according to package directions. In skillet add olive oil and saute garlic for 30 seconds. Add in asparagus and cook until crisp tender. Add in Lemon & Herb cooking cream until just heated through. Remove from heat and add in cooked orzo pasta. Stir in 1/4 cup feta until thoroughly mixed. Serve immediately.
