And now…..back to our regular scheduled program.
I had fallen off the band wagon ever since Christmas and am finally getting my life together after Christmas parties, snow, my dad’s 70th party, my son’s first party and both boys being sick. So, finally! Here we are with menu planning again! It does feel so much better to have a plan going into the week than to constantly be thinking throughout the week, “What am I going to make today, and is anything thawed to make it with?!” A plan helps to know what needs to be taken out of the freezer and when, AND my grocery shopping is done for the week as I already know exactly what ingredients I will need. It is much easier for me to stay on budget that way.
Monday: Chicken Lentil Soup with salad and homemade biscuits and some honey butter
Tuesday: Crockpot Pasta Fagioli
Wednesday: Chicken Croquettes for the adults and Chicken Nuggets for the boys, I am going to put one of the whole fryers in the crockpot and then use the breasts from that to make these with. The only difference between the adults and kids is spinach, though I will try to get them to try ours.
Thursday: Friends over for dinner: Beef Calzone, Apple Feta Salad, Cupcakes with frosting squishes:)
Friday: Chicken Pot Pie
Saturday: Sirloin steak, Sweet Potato Risotto, salad
Sunday: Turkey Meatballs with rice and steamed broccoli
Hope this inspires someone to start menu planning or restart it like I had to. It took me about 15 minutes to sit down with my recipe box and plan my meals and is going to save me a whole lot more time than that!
