What’s for dinner? This week’s soup menu plan (12/9)

Confession: I have never spent any amount of time preparing a freezer meal. Gasp. I know. I just can’t handle the thought of spending hours in the kitchen with ingredients strewn all over the place. I’m as good with long hours in the kitchen as I am with large amounts of laundry. Enter the humble soup. What do I love about soup? I can make at least two meals out of each recipe. Soup freezes better than any other meal, in my opinion. Every time I make soup I get a meal now and a meal later. Problem solved.

While we are giving soup a high five, I’d like to add that it is so much easier to get your kids to eat large amounts of vegetables when they are hidden in a soup.

These are my favorite soup recipes. I snuck in my go-to stew recipe in the end because that freezes well too:

Monday —  Black Bean Enchilada Soup

Tuesday — Acorn Squash Soup

Wednesday — Slow Cooker Thai Chicken Soup

Thursday — Chicken Butternut Squash Soup (I dump chicken, squash, carrots, celery, and maybe basil and noodles into chicken broth, chicken soup is so easy!)

Friday — Broccoli & Cheese Soup

Saturday — Abondigas Soup (Abondigas means meatballs in Spanish)

Sunday — Beef & Vegetable Stew (I follow this recipe loosely, The only ingredient I use in the second column is the bay leaf and I cook it in a crock pot which adds about 1-2 hours to the cooking time, sometimes put some of the broth with a corn tortilla in the blender and add this back to the stew before stirring. My mother-in-law does it and it tastes good!) I serve this over brown rice.
