What’s for dinner? This week’s menu plan (11/18)

Howdy! I’m a Texan living in the northwest and believe me, my blood is thin.  I love soup year round because of that, but my family only likes it during the winter months. Hurrah for cold weather. Soup everyday!  If my natives get tired of soup, I freeze the leftovers for quick lunches.

I’ve been a meal planner before it was cool.  Here is my strategy: with 7 people in our family, each member takes 1 night of the week to choose their meal.  That way they ‘own’ their meal.  No complaining; no griping that we ‘never eat anything good’; no refusing to eat that night. All of the drama is swept out the door, because they can’t deny that 1 night of the week was their meal- and it better be good!

Here’s what’s for dinner at my house this week:

Monday — Homemade Chicken Noodle Soup with Mojo Sauce (If you are starting to feel sick, you MUST eat this)

Mojo Sauce: 2 T. each of olive oil and fresh grated ginger, 2 heads garlic, lemon juice and about 1/8 tsp cayenne to taste. Blend well together in food processor.  Put a teaspoon or so on top of soup as garnish/heat.

Tuesday — Taco Salad (I cook my own black beans and add it to ground turkey meat with my own seasoning mix)

Wednesday — Milk Shakes, pancakes, and turkey bacon

Thursday — Crock Pot Enchiladas

Friday — Dinner at my mother-in-law’s house, bringing Rhubarb Oat Crumble

Saturday — Tarragon Salad, No-Knead Bread

Sunday — 2 Hour Ribs, Spinach Salad
