Our kids are good eaters, but with six people in our family there’s simply no way that everyone is going to love every meal that gets put on the table. However, we all eat what’s served (even the occasional recipes that are flops) and over the course of the week each person likes more foods than not. From soups to salads and vegetarian dishes to meals with meat, here’s one week’s variety of dinners.
Here’s what’s for dinner at my house this week:
Monday — Cheesy Green Beans (If lasagna was made with green beans instead of noodles, it would taste like this.), rice
Tuesday — We (almost) always have Taco Tuesday at our house, some eating their taco fillings on a pile of lettuce or spinach and others piling theirs in or on tortillas. I pull the world’s best beans and some turkey or beef I pre-cooked with homemade taco seasoning from the freezer in the morning to make this an easy meal.
Thursday — Lebanese-Style Red Lentil Soup, Buttermilk Biscuits with chives and black pepper (I could eat these every day of my life, but I only bake them when I have enough chives growing in the back yard to whip up a batch.
Saturday — Lemon Garlic Tilapia (This gets inhaled in about 30 seconds flat by every member of the family.), rice, Winter Fruit Salad with Lemon Poppy Seed Dressing (That would be winter fruits in a green salad, not a fruit salad in winter. And it would be delicious.)
Sunday — This is my day off, so we eat leftovers.
